Five Easy Recipes Using Summer Produce

As a family of fruit and vegetable lovers, the summer is by far our favorite season of the year. If we are not eating the produce fresh and as soon as we buy it then we make smoothies, juices, guacamole, popsicles, nice cream, or fruit infused water. I love anything that keeps us hydrated and that doesn’t involve cooking on the stove or using the oven on extremely hot days. I usually add Irish Sea Moss gel into all of the following recipes for an added nutritional boost. 

Below are five of our go-to summer recipes that we make throughout the season:



Guacamole

2 ripe avocados

Juice of one small lime

1 medium red onion

⅓ cup of cilantro

Sea salt to taste


Cut your avocados in half and scoop out the middles. Put them into a bowl and mash with a fork or a potato masher. Dice the red onion and add to the bowl. Add ⅓ cup of chopped cilantro leaves. Juice the lime and add sea salt to taste. Stir until well combined. Grab some tortilla chips and enjoy!



Easy Watermelon Lime Juice

2-3 cups of watermelon cut into chunks

Juice of 3 small limes


Add the ingredients to a blender and blend until the melon becomes a liquid. Add more lime juice if necessary. 

*Pour this into popsicle molds and freeze for a refreshing summer treat



Peach Blueberry Nice Cream

1 ½ ripe bananas sliced and frozen overnight

1 peach cut into chunks and frozen overnight

½ cup of frozen blueberries

Optional: 

A splash of vanilla extract and 1 tbsp maple syrup or agave

Add ingredients to a food processor or a high powered blender and blend until creamy. Add the toppings of your choice.



Blueberry Lemon Smoothie

2 frozen bananas

1 cup frozen blueberries

Juice of one lemon

Handful of fresh spinach

1 ½ -2 cups of fresh water

Add all of the ingredients to a blender and blend until well combined. Add more water if needed to reach your desired consistency.



Cantaloupe Kale Smoothie

1 cup frozen cantaloupe chunks

1 cup frozen pineapple chunks

Handful of fresh kale

1 frozen banana

A ¼-½” piece of fresh ginger

1 ½ cups of fresh water

Optional: 

½ cup of frozen peaches

¼ of a fresh apple


Add ingredients to your blender and blend until smooth.
